A modern café-bar hybrid — a shot of espresso floated over tonic water with a citrus twist.

  1. 1Fill a highball glass with ice.
  2. 2Pour tonic water into the glass.
  3. 3Slowly pour the cooled espresso over the back of a spoon to float it.
  4. 4Garnish with an orange or lemon twist.
