Fig Sour
A rich autumn sour with bourbon, fresh fig puree, lemon juice, and a silky egg white foam.

Ingredients
- 2 fl oz. bourbon
- 1 fl oz. fresh fig puree
- 0.75 fl oz. fresh lemon juice
- 0.5 fl oz. honey syrup
- 1 egg white
Directions
- 1Combine bourbon, fig puree, lemon juice, honey syrup, and egg white in a shaker.
- 2Dry shake without ice to emulsify.
- 3Add ice and shake vigorously until frothy.
- 4Strain into a chilled coupe and garnish with a fig slice.
