A potent rye sour with a frothy egg white, brightened by lemon and given a mysterious edge with absinthe.

Directions

  1. 1Combine rye, lemon juice, simple syrup, egg white, and absinthe in a shaker.
  2. 2Dry shake without ice to emulsify the egg white.
  3. 3Add ice and shake again vigorously until frothy.
  4. 4Strain into a chilled coupe glass.
