Rattlesnake
A potent rye sour with a frothy egg white, brightened by lemon and given a mysterious edge with absinthe.

Ingredients
- 2 fl oz. rye whiskey
- 0.75 fl oz. fresh lemon juice
- 0.75 fl oz. simple syrup
- 1 egg white
- 1 tsp. absinthe
Directions
- 1Combine rye, lemon juice, simple syrup, egg white, and absinthe in a shaker.
- 2Dry shake without ice to emulsify the egg white.
- 3Add ice and shake again vigorously until frothy.
- 4Strain into a chilled coupe glass.
